It’s been a million years since I posted. I’ve been on a pretty awesome journey of the 21 Day Fix Extreme and I have vowed to myself that I’m going to share more. I can’t say enough about what this program is doing for my body and mind. Full disclosure post when I have some more time. For now, just a quick, easy, toddler approved meal.
Cheddar Broccoli Chicken
1❤️ of chicken breast (butterfly and then cut in half for the proper portion)
1/2💙 of shredded cheddar (you can use a full if desired)
1💚 of frozen broccoli
1 tsp. oregano
1/2 tsp. paprika
1 tsp. ground black pepper
Sea salt to taste
Preheat oven to 400. Place chicken in a pan lined with aluminum foil. Place frozen broccoli on top of chicken breast. Sprinkle with seasonings. Top with shredded cheddar. Bake for 30 minutes.
Mashed Baby Red Potatoes
1 serving of mashed potatoes will also have 1 tsp. 1 1/2💛 (to account for almond milk), and 1/2💙
Place baby red potatoes in an empty pot. Top with cold water. Bring to a boil and allow to cook until fork tender. Drain well. Add 4 tsp. of coconut oil (for 4 servings), enough unsweetened almond milk to moisten, and 2 💙 containers of parmesan cheese (for 4 servings). Mash until lumpy smooth.
Total count for dinner = 1❤️, 1💚, 1💙, 1 1/2💛, 1 tsp.
